Cow Pies

I love no bake recipes. They are so easy to make when you have the right ingredients and just a little time. And I love making them when I’m in the mood for a little sweet treat. I didn't even know what Cow Pies were until just a few days ago. But when I found out I was so delighted. It is one of the easiest and best recipes I have ever made. It has a creamy sort of fudge along with the oats that makes it crumby.



Ingredients:


1/2 Cups Butter

2 Cups Sugar

1/2 Cup Milk

1/4 Cup Cocoa Powder

1/2 Cup Creamy Peanut Butter

1 Teaspoon Vanilla Extract

3 Cups Rolled Oats


Instructions:


1. Before getting started, make sure to gather all of your ingredients and measure everything out. Line two large baking sheets with parchment paper and set aside.


2. Place the butter, sugar, milk, and unsweetened cocoa powder in a saucepan and heat over medium heat, making sure to stir often until the butter is melted and everything is well combined. Bring the mixture to a rolling boil and allow to boil for 60 seconds (make sure to set a timer!) stirring occasionally.


3. Remove from the heat, and stir in the peanut butter and vanilla extract until fully combined. Stir in the oats and mix until all of the oats are coated with the mixture and everything is well combined.


4. Drop spoonfuls of the mixture onto the prepared baking sheets (I like to use a 2 tablespoon cookie scoop). Allow to cool for 20-30 minutes, serve, and enjoy!


One thing I have wondered about Cow Pies is why they call them Cow Pies. I have also heard them being called Mud Pies. I guess I’ll never know why its called either name. But anyways, I love this recipe, it is quick, it is easy, and its a whole lot of fun to make, and its great for a late night snack as well as a during the day treat. In all truthfulness I whipped these up at 8:30pm last night, and I can tell you that it was a great treat to make when you have a hankering for something sweet.
