Chunky Chocolate Chip Cookies

These cookies will bring you so much joy when baking them. They are a simple, and slow paced dessert to make. The hardest part about it is browning the butter and that takes almost no skill at all. You can make these cookies in advance and freeze or refrigerate the dough before baking.



Ingredients:


1 Cup (2 Sticks) Unsalted Butter

1/2 Cup White Sugar

1 Cup Brown Sugar

2 Whole Eggs

1 Egg Yolk

1 Teaspoon Vanilla Extract

1 Teaspoon Bourbon (Optional)

Zest Of 1/2 An Orange

2 1/4 Cup Flour

1 Teaspoon Baking Soda

12 Ounces Dark Chocolate Bar (Cut In Chunks)

Flaky Salt For Sprinkling (Optional)


Instructions:


In a small pot melt the butter on medium heat. Allow to turn brown, about 5 minutes. Keep an eye on the butter, as it can go from brown to burnt quickly. The butter should start to smell nutty and have a brown but clear color to it. Remove the butter from the heat, use a rubber spatula to pour the butter and it's brown bits into the bowl, and refrigerate until cold, 40 to 60 minutes.


Once the butter is cold, in a stand mixer or in a large bowl with a hand mixer, on medium speed, mix together the brown butter, white sugar, and brown sugar until the mixture becomes pale and almost creamy, 3 to 4 minutes.


Add the eggs and egg yolk, one at a time, mixing for 20 seconds after each addition.


Add the vanilla, bourbon, if using, and orange zest and mix to combine.


Scrape down the sides of the bowl, and while the mixer is on low speed, slowly add in the flour and baking soda. allow to incorporate, 3 to 4 minutes.


Fold in the chocolate chunks.


Place dough on a clean work surface, divide into quarters, and roll into logs. Wrap in waxed paper or plastic wrap and refrigerate for 1 hour until firm.


Preheat the oven to 350 degrees Fahrenheit and line 2 large baking sheets with parchment paper.


Cut 2 inch thick discs from the cookie logs and place on the baking sheets 1 to 2 inches apart.


Sprinkle the cookie discs with flaky salt, if using, and bake for 9 to 10 minutes, until the cookies are lightly golden brown.


I had so much fun making these cookies, and it was great because I haven't baked anything in a little while.These cookies were made from a recipe in the Friends Official Cookbook by Amanda Yee. A wonderful book packed with fun and festive recipes inspired by the television show Friends. This particular recipe is based on Pheobe's grandmothers famous chocolate chip cookie recipe. Although this one is not made from the back of the chocolate chip bag. This recipe is one of the trial batches that Monica makes in the episode, and it's not batch 16, (Wink wink, for the friends fans!)
