Muffin/Loaf Ingredients: Makes A Dozen
1 1/2 Cup Whole Wheat Flour
1 1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Mashed Bananas
2 Eggs
1/2 Cup Canola Oil
1/2 Cup Honey
For Streusel Topping, You Will Need
1 1/4 Cup Oats
1 Tablespoon Flour
1/3 Cup Brown Sugar
1 Teaspoon Cinnamon
Dash Of Nutmeg
6 Tablespoons Cold Butter
In a large bowl combine, Flour, Baking Powder, Baking Soda, and Salt. In another large bowl combine, Mashed Banana, Eggs, Oil, and Honey, making sure to mix well. Add Banana blend to flour mixture, being careful not to over mix. Pour into a greased muffin tin, or paper muffin cups. For Streusel Topping, combine, Oats, Flour, Brown Sugar, Cinnamon, Nutmeg, and Butter in a bowl until crumbly. Pat lightly onto prepared banana bread. Bake at 325 degrees for 25 to 30 minutes. For Banana Bread, bake greased loaf tin at 325 degrees for 60 minutes.
This recipe is one of mine, and my family's favorites. The crunchiness of the oat topping combined with the beautiful flavor of the banana bread, really puts me in my happy place. I hope that all who make this are as delighted to have it as I am.
